Our Connecticut Trail Census program recently received $206,049.50 in grant funding from the Department of Energy & Environmental Protection (DEEP) Trails & Greenways Program and the Connecticut Greenways Council. UConn Extension’s Connecticut Trail Census is a statewide volunteer-based data collection and education program implemented as a pilot from 2016-2018 on 16 multi-use (bicycle, pedestrian, equestrian) trail sites across the state.
Technology is ubiquitous, and a team of researchers at UConn are harnessing our everyday technology to address obesity issues in children and young adults (Poulin & Peng, 2018). Social media and text messages are a common communication tool among multiple populations, and can positively influence behavior change in health and nutrition (Hsu, M.S.H., Rouf, A., & Allman-Farinelli, M., 2018; Tu, A.W., Watts, A.W., Chanoine, J.P., Panagiotopoulos, C., Geller, J., Brant, R., et al., 2017; Pew Research Center, 2015 & 2018).
Tailored messages for health promotion and obesity prevention using e-health and m-health is supported through Hatch funding from the Storrs Agricultural Experiment Station in UConn’s College of Agriculture, Health and Natural Resources. The inter-disciplinary team includes faculty and staff from Allied Health Sciences, the Rudd Center for Food Policy and Obesity, Communication, Windsor Public Schools, Connecticut Children’s Medical Center, UConn Student Health Services, and the Windsor Hunger Action Team.
The team is implementing three connected studies to harness technology and deliver tailored nutrition and health messages to middle school students, adolescents, and young adults to improve diet quality for obesity prevention. Partnerships with the Connecticut Children’s Medical Center and Windsor Public Schools reach children. Young adults are included through the study with UConn Student Health Services. Each of the three studies is using quantitative and qualitative research methods.
Valerie Duffy, PhD RD, Professor and Director of the Graduate Program in Allied Health Sciences is the principal investigator. “It’s more meaningful if you tailor messages to someone on health promotion,” Duffy says. “Our goal is to prime the pump and nudge people toward better diet and lifestyle behaviors. The messages were developed with input from those in the age group being served, and the algorithm tailors the messages to the individual’s responses.”
The tailored messages will have short-term and intermediate-term impacts. The child and parent will receive text or email messages on improving diet healthiness of children based on their online responses. Intermediate-term impacts will again be tailored to individual responses and delivered by email, text and social media with the goals of improving diet healthiness, and school meal consumption over the school year.
Heidi Karner is graduating in May of 2019 with her masters’ degree in Health Promotion Sciences from the Department of Allied Health Sciences. She works with the Supplemental Nutrition Assistance Program Education (SNAP-Ed) and the tailored messages project.
When she was an undergraduate in the dietetics program, completing a 4-week supervised practice rotation in Windsor, Karner saw a need in the community that wasn’t being met. This led her to pull together a collaborative team including the Windsor Schools, the Windsor Hunger Action Team, and the University to prepare and successfully obtain a seed grant from Foodshare. “The school food service director wanted to increase breakfast participation at Sage Park Middle School, and received $5,000 to start the project. We also tested breakfast items with the students, and many of our vendors donated products.”
The goals for the message program at Sage Park Middle School are to increase fruit and vegetable consumption, increase
breakfast program participation, and decrease food insecurity in middle school students. These goals were identified as problem areas by the middle school staff and the Hunger Action Team.
The collaborative team is working on a quantitative and qualitative approach to develop the message program. In the quantitative phase, 200 students completed an internet-based survey on what foods and activities they like or dislike and their attitudes and believes. The students completed the survey on Chromebooks available to each student at school. The students received messages tailored to their responses. From initial analysis of this quantitative phase, the tailored messages were well received by students — 78% agreed that they learned new information, 86% reported the messages were helpful, and 73% would like to receive more messages in the future.
In the qualitative phase, the complete findings of the quantitative survey will be shared with the stakeholders. The feedback will identify priority areas where student behaviors differ from recommendations. Feelings and feedback from students will be obtained through focus groups.
This feedback is being used to create a fun and interactive computer game to embed on the website. The Department of Communication at UConn is collaborating on the computer game, and it will be piloted with the middle school students.
“We’re trying to change the culture in the school and community about food and health,” Karner says. “I’m always asking what is relevant to the students, and what do they want.”
It all connects back to understanding the population being served, their health behaviors, and preferences. “It’s not just about hunger, but nutrition too,” Karner adds. “We focus on the quality of the foods.” Although Karner is graduating, this is a continuing project that will be refined and passed along to other graduate students to champions, continued collaboration with stakeholders and sharing best practices without other school systems.

As part of Marc Cournoyer’s involvement with the Healthy Homes Partnership, he created a poster contest to recognize national hand washing awareness week which runs from Dec. 2-8. Some of the kids from the Windham Heights 4-H club created posters to educate the public on the importance of hand washing. Marc is a UConn Extension 4-H educator.
Obesity is increasingly affecting residents of Connecticut. Recent statistics report that 20% of children and 36% of young adults are afflicted by obesity (Poulin & Peng, 2018). A team of Extension educators, faculty, and graduate students in Allied Health Sciences are working with community partners to take a multi-faceted approach to addressing health and nutrition issues in schools and families through research and outreach.
“We’re trying to empower income-challenged families to minimize the barriers to healthy eating and lifestyles,” says Valerie Duffy, PhD RD, principal investigator or co-principal investigator on the projects, and Professor and Director of the Graduate Program in Allied Health Sciences. “We’re working with stakeholders to determine what modes of communication are best for them, and how to close the gap between what the families are doing, and what behaviors would be better.”
Currently there are three funding sources supporting the initiatives of the team. The first is a grant from the Child Health and Development Institute of Connecticut on preventing obesity in early childhood by offering parents of economic disadvantage simple and feasible feeding practices to develop healthier food preferences for their children. Duffy and Jennifer Harris, PhD, MBA from Allied Health Sciences and the Rudd Center for Food Policy and Obesity are the co-PIs. Other team members are from Allied Health Sciences, the Rudd Center, the Department of Nutritional Sciences, the Department of Communication, and Connecticut Children’s Medical Center. The community partner is East Hartford Family Resource Center.
“We have a collaborative team that’s trying to develop simple messages for families to help them establish healthy eating behaviors in toddlers. We hope to make messages are tailored to families so they are more meaningful,” says Duffy.
Hatch funding from the Storrs Agricultural Experiment Station, also in UConn’s College of Agriculture, Health and Natural Resources funds tailored messages for health promotion and obesity prevention using e-health and m-health. The inter-disciplinary team is also on this project, with many of the same team members. Three connected studies will harness technology to deliver tailored nutrition and health messages to middle school students, adolescents, and young adults to improve diet quality for obesity prevention. Community partners include Windsor Public Schools and UConn Student Health Services.
The SNAP-Ed program, funded by the Supplemental Nutrition Assistance Program (SNAP) of the United States Department
of Agriculture (USDA) is the third funding source, and glue that connects all of the projects. The SNAP-Ed program has built a foundation in communities throughout central Connecticut and developed strong partnerships over many years of collaboration. In turn, these partnerships allow the team to identify community needs with input from audiences served and program partners.
“We make lessons applicable to our audiences’ lives,” says Tina Dugdale, MS, RD/RN. “It’s possible to eat healthy foods like fruits and vegetables in recommended serving sizes.” The SNAP-Ed program engages undergraduate and graduate students in Allied Health Sciences – especially those in the Dietetics Coordinated Undergraduate Program and Internship – who work in a variety of communities in Connecticut to deliver nutrition education and carry out service and outreach projects.
All three of the projects offer communication and outreach that is culturally relevant and tailored to the populations served. Materials and classes are offered in English and Spanish. Survey research will identify the key gaps in behavior, and further influence the communication campaigns. The goal connecting all projects is to improve family dietary quality and energy balance in families of economic disadvantage.
“Many people are banded together throughout the state putting forth efforts to help people with their hardships,” Dugdale concludes. “It’s a satisfying victory when we see our participants make small changes that contribute to the improvement of their health and nutrition.”

Eastern Equine Encephalitis (EEE) is a disease caused by a virus that mosquitos transmit. The name of the disease is misleading in that this virus can infect and cause disease in humans and a wide variety of animal species, including birds as well as horses and other equids. Horses that have not been vaccinated for EEE die within days of being infected as there is no treatment. There is an effective equine vaccine for EEE, however not for other species. In recent weeks. two unrelated sick birds, one of which was a bald eagle, tested positive for EEE at UConn’s Connecticut Veterinary Medical Diagnostic Laboratory (CVMDL). Researchers and veterinarians at CVMDL encourage equine owners to consider vaccinating their animals, and other animal owners to implement measures to reduce mosquito habitats and thereby potential contact with mosquitos.
Mosquitos that feed on infected wild birds transmit EEE to horses and humans. Once infected, the virus attacks the central nervous system of the host. For horses, disease signs usually appear within five days and the clinical signs include fever, a dull or sleepy appearance, muscle twitches, and a weak staggering gait. Fatality in horses is 90% or higher as horses often go down and are unable to stand again, and those that do survive may have permanent brain damage.
EEE is transmitted by two main types of mosquito vectors; the primary vector and the bridging vector. Culiseta melanura, the primary vector which feeds almost exclusively on birds, serves to amplify and maintain the virus within wild bird populations. Other mosquito species, which indiscriminatingly feed on birds, horses, and humans, serve as the bridging vector capable of transmitting EEE from wildlife to horses and humans.
With the location of horse barns and pastures in rural areas the animals have increased exposure to mosquitos. Horses cannot pass EEE to humans, or to other horses, and are therefore referred to as a dead-end host. If an infected mosquito bites a human, that person can be infected and may develop disease. According to the Center for Disease Control, illness in humans due to EEE is rare, but when disease develops, it is serious.
Proactive steps can be taken to prevent EEE virus infection in humans and horses. A vaccine is available for horses, talk to your veterinarian about vaccinating annually for EEE. Mosquito control techniques include eliminating standing water, cleaning water troughs weekly, avoiding mosquito-infested areas, and using insect repellent.

Many of our programs work with land use and municipal officials, connecting them with the education and resources needed for their positions. Carol Noble is an Engineer from Bristol who has worked with our Center for Land Use Education and Research (CLEAR)MS4 program.

The NEMO website for CT MS4 Guide; the GIS Mapping, Control Measures summaries and educational materials have been and continue to be valuable resources for the Bristol MS4 program. The UConn 4-Hyouth development program serves over 16,000 youth across the state every year. Volunteer leaders are an integral part of the program’s success, and work with Extension educators in our eight county offices.
“By the 2014 4-H Fair I felt ready to impart my knowledge onto others. For the first time I was able to walk someone through all of the steps of an archer. I would always
begin by strapping an arm guard on them and showing them how to position their feet. Then I would go on to explain how to hold the bow, nock an arrow, and pull back the string. What surprised me was adults’ willingness to learn. Although towering over me, they politely listened while I taught them what to do, letting me know that my voice mattered,” says UConn 4-H member Garret Basiel of Middlesex County. Garret is a freshman at UConn in the Department of Natural Resources and the Environment.
“UConn: Thank you so much for all the time and effort put into having these classes for seniors. They have made a real difference in my life. Sincerely, Fran.” We received this letter from Fran, a Tolland County resident, after one of our recent classes with our Center for Learning In Retirement (UConn CLIR). CLIR offers meaningful and serious intellectual activities for adults from all walks of life, conducted in an informal and relaxed atmosphere. There are no academic requirements.
Extension has worked with farmers in Connecticut for over a century, and we continue to serve farmers in all sectors of agriculture, and at various experience levels. “As a new farmer, there are many things you don’t know that you don’t know. So, these programs encourage you to ask new questions you hadn’t previously thought of before and therefore to be better prepared for the growing season. Since many of the trainers are local, the content of the trainings is more relevant (versus online content) and it’s great that you can follow up with them after the training,” states Yoko Takemura of Assawaga Farm in Putnam, a participant in our Solid Ground Farmer Trainings.
Collaboration has been a cornerstone of Extension’s mission for more than a century. The Connecticut Veterinary Medical Diagnostic Laboratory (CVMDL) at UConn safeguards animal and human health. Faculty and staff fulfill their mission through veterinary diagnostic laboratory services, professional expertise, and collaboration with state and federal agencies to detect and monitor diseases important to animal and human health, as well as detecting newly emerging diseases.
CVMDL is committed to providing current, timely, and personalized expert service to our client veterinarians, animal owners, producers, academic collaborators, and partner agencies. The laboratory is housed within the Department of Pathobiology and Veterinary Science, and develops new approaches to disease identification, investigation, and prevention while educating students, including veterinarians, seeking advanced training in disease related studies.
CVMDL incorporates the land grant university mission of service, teaching, and research in its daily practices, and is the only laboratory in New England accredited by the American Association of Veterinary Laboratory Diagnosticians. Services offered include: histology, immunohistochemistry, mastitis, microbiology, molecular diagnostics, pathology, parasitology, serology, and virology.
“We send a lot of our clients to CVMDL for the necropsy service,” says Dr. Scott Morey ’06 (CAHNR) of Fenton River Veterinary Hospital in Tolland. “We want a necropsy done in the proper environment, where better diagnostic samples can be obtained and processed, as opposed to what we can collect in a field necropsy. Most of the time we’re mainly looking for infectious disease so we can change what happens for the other animals left on a farm.”
Necropsy services can also be used for small animals. Dr. Heidi Morey ’05 (CAHNR) handles the small animal end of the veterinary practice, while Scott primarily works with large animals. “We had one young dog die suddenly on a client, and CVMDL helped determine it was most likely a heart attack,” Heidi mentions.
“We do a surprising amount of chicken work,” Scott continues. “CVMDL completes efficient and timely necropsies on chickens. We also utilize them for rabies testing, and Caprine Arthritis Encephalitis (CAE) test for small ruminants. Clients who own sheep and goats want their animals to be CAE negative, and need proof of that. We send the samples to CVMDL.”
Tick testing is part of the molecular diagnostics section. A single infected deer tick can transmit anywhere from one to four illnesses simultaneously. CVMDL is the only laboratory in the state that will test a deer tick off humans or animals. CVMDL also tests other common species of ticks. The lab tests deer ticks for Borrelia burgdorferi, Anaplasma phagocytophilum, Babesia microti, and Borrelia miyamotoi. Dog ticks are tested for Francisella tularensis, Rickettsia rickettsia, Ehrlichiaspecies. Lonestar ticks are tested for Ehrlichiaspecies, Francisella tularensis, and Borrelia lonestari. Brown dog ticks are tested for Rickettsia rickettsiaand Ehrlichia species.
Residents, doctors, veterinarians, and public health officials utilize tick testing services to make proactive and informed decisions regarding human and animal health. In 2017, 397 ticks were tested.
Connecticut is home to a number of large dairy farms, and CVMDL provides mastitis testing and environmental pathogen testing, in addition to Brucellosis, Johnne’s, and other diseases. Rabies tests on animals that may have come in contact with a human are also sent to the Department of Public Health for confirmation testing. All other rabies testing in Connecticut is done at CVMDL.
The laboratory is on the frontlines of safeguarding animal and human health in Connecticut. Each case that arrives in Storrs is different, and provides the team at CVMDL with another opportunity to teach students and clients, develop new tests and procedures, and monitor disease and health issues.

Salmonella are bacteria that can live in the intestinal tracts of animals. There are many different types of salmonellae, some are found solely in animals and others can cause disease in both animals and people. Salmonellosis in humans can occur if they consume foods contaminated with Salmonella or have contact with animals or their environment. Animals commonly found with salmonella include reptiles, amphibians, poultry, wild birds, rodents, pocket pets, farm animals, dogs, cats, and horses.
Animals may carry certain types of Salmonella bacteria without showing any clinical signs of disease. When the Salmonella type does present with clinical signs, septicemia or typhoid, and enteritis (diarrhea) are seen. In some cases, abortion, arthritis, respiratory disease, necrosis of extremities (gangrene), or meningitis may develop. In these severe clinical infections veterinary management of Salmonella infection in an animal or herd may include isolation of the sick animal to recover, and limit any spread within the herd, or to humans. The presence of Salmonella in animals (i.e. Salmonella pullorum-typhoid or Salmonella enteritidis), is reportable to the state veterinarian and actively monitored for through surveillance testing of poultry going to fairs and requiring imported poultry to come from disease-free breeder flocks.
Salmonella is a major public health concern. There are approximately 40,000 human cases of salmonellosis reported in the United States every year, however the number could be thirty or more times greater, as milder cases may not be diagnosed by physicians or reported by the public.
People can become infected with Salmonella by:
- Eating foods contaminated with the bacteria, such as beef, poultry, unpasteurized milk, eggs, or vegetables that are not properly handled, prepared and cooked.
- Food contaminated by an unsanitary food handler during preparation.
- Direct contact with farm animals or pets (including reptiles, baby chicks, and ducklings), animal feces, or animal environments.
- Touching contaminated surfaces or objects and then touching their mouth or putting a contaminated object into their mouth.
- Not washing hands after using the bathroom or changing diapers or touching animals or their environments prior to eating or drinking.
- Drinking unpasteurized milk or contaminated water.
The Connecticut Veterinary Medical Diagnostic Laboratory (CVMDL) at UConn offers a number of diagnostic procedures and tests to assist veterinarians and animal owners in diagnosing Salmonellosis or other possible diseases. Services available are whole dead animal necropsy evaluations, sample culturing for pathogen identification and antimicrobial sensitivity testing, and screening blood samples for export movement or flock certification.
CVMDL is the only laboratory in New England accredited by the American Association of Veterinary Laboratory Diagnosticians. The laboratory is located on the UConn-Storrs campus and provides diagnostic services, professional expertise, research, and detection of newly emerging diseases. CVMDL collaborates with federal, state, and local agencies to detect and monitor diseases important to animal and human health.

Last year, through the hard work of all, the Allied Health Sciences School and Family SNAP-Ed program reached 5,549 participants and 6,164 contacts via single and multiple sessions. Education focused on: 1) cooking more, economical food shopping, safe food handling; 2) improving consumption of fruits and vegetables, low-fat dairy, whole grains and avoiding sweetened beverages; and 3) increasing physical activity to balance calories consumed with energy expended. We also reached 33,032 contacts indirectly with food and nutrition topics based on MyPlate and the 2015 Dietary Guidelines for Americans.

The United States Department of Agriculture (USDA), through the Food Stamp Act of 1977, as amended, provides for the operation of the Supplemental Nutrition Assistance Program – Education (SNAP-Ed) in the State of Connecticut. The State of Connecticut Department of Social Services (DSS) has been designated by the USDA to administer the State’s SNAP-Ed activities and DSS in turn has contracted with UConn and the CT Department of Public Health to design and implement the SNAP-Ed projects. Under this contract, the USDA has authorized the University of Connecticut’s Department of Allied Health Sciences to administer, design, develop implement and evaluate a Supplemental Nutrition Assistance Program – Education (SNAP-Ed) plan.
